I have a zucchini problem.

I planted the least amount of plants ever in my tiny vegetable garden and have had the most bounty ever. I'm not sure if it's a result of the unseasonably hot weather or the fact that things are less crowded.



Does anyone have any good zucchini recipes? Have you had any luck freezing it? There are many more to come.

We usually cook our glut up as ratatouille. I expect you know what that is but if not it's just a base of lots of tomatoes which you can add what you like to. We add courgettes (zucchini), peppers, garlic, onion etc. A bit of tomato paste thickens it nicely. We cook this in vast amounts, freeze in meal size amounts, and then it's excellent during the winter as a base for sauces, or just poured over pork chops, chicken etc. Like an instant meal.

Cath, thanks for reminding me of this. I did make a batch of it last summer and it tasted amazing in the winter. I'm waiting for local red peppers to do this. Do you use eggplant in yours and do you you cook all the vegetables together or separately?

I don't use eggplant because none of us are keen on it but I do sometimes add fennel if we have some in the garden. It's the kind of thing you can put anything into really. Yes, I cook everything up together in our huge preserving pan. This year, due to all the rain we've had, we haven't got a glut of courgettes sadly - but the tomatoes in the greenhouse are doing well. It's weird year for the garden.
